Although as far as I understand something like this is not feasible with the current implementation of the VM, would something like that be possible with JITed code after PHP 8.0?

No, and from the look of that thread, some heavy hitters in internals don’t seem like they would want to be tied down with what would be necessary to make it even have a chance of working.
Protect your source code with contracts backed up by legal action, or offer it as a hosted service.
Why would it?
